Cuban Black Bean Soup Recipe

Ingredients
  • 1 c sour cream (for garnish) .
  • 3 quarts cold water .
  • 2 tbsps dried oregano .
  • 2 bay leaves .
  • 1 c extra virgin olive oil .
  • 2 tbsps salt .
  • 2 medium onions, sliced .
  • 1 tbsp ground cumin .
  • 2 tbsps sliced fresh oregano leaves .
  • 1 lb dried black beans .
  • 1 1/2 tbsps sugar .
  • 8 garlic cloves, minced

Directions
  • Step #1 Place the beans In a large-ish pan.
  • Step #2 Cover up with 3 quarts cold water & add the bay leaves.
  • Step #3 Bring to a boil, then reduce to a simmer.
  • Step #4 Cook the beans for 3 hrs, stirring frequently & adding more water as necessary to keep the beans covered at all times.
  • Step #5 Heat the oil In a large-ish skillet.
  • Step #6 Add the onions & sauté over medium-high heat until translucent, about 15 mins.
  • Step #7 Add the garlic, cumin, & dried & fresh oregano & sauté for 2 more mins.
  • Step #8 Remove from the heat & cool slightly.
  • Step #9 Transfer the onion mixture to a mixer & puree until smooth.
  • Step #10 Set aside.
  • Step #11 When the beans are almost tender, add the onion puree, & continue cooking until just tender, & salt, sugar, 30 mins.
  • Step #12 Taste & adjust seasonings.
  • Step #13 Ladle the hot soup into bowls & garnish with sour cream.
