Minted Peas And Pasta Salad Recipe

Ingredients
  • 1/2 tsp salt .
  • 3 tbsps mint, coarsely sliced, save extra for garnish .
  • 1/4 c low-fat sour cream .
  • mint (to garnish) .
  • 2 c fresh green peas (or Petite frozen) .
  • 1/4 c low-fat mayonnaise .
  • red leaf lettuce, bed (to garnish) .
  • 9 oz cheese tortellini, fresh .
  • 4 tbsps pesto sauce (homemade or store bought) .
  • 1/8 tsp coarsely ground fresh pepper .
  • Salad .
  • 4 green onions, thinly sliced .
  • 1 c mozzarella cheese, cubed .
  • Dressing

Directions
  • Step #1 Combine all dressing ingredients, mix well, cover & chill in the fridge.
  • Step #2 Cook tortellini, drain & rinse with cold water.
  • Step #3 Steam Peas (if using frozen, just thaw).
  • Step #4 Combine tortellini, peas, cheese & onion.
  • Step #5 Add dressing, tossing to coat.
  • Step #6 Place in refrigerator for at east one hr.
