Garden Vegetable Spaghetti Recipe

Ingredients
  • 2 medium carrots, sliced (1/4 c) .
  • 1 tbsp sliced fresh basil leaves or 1 tsp dried basil leaves .
  • 1/2 c frozen green peas, thawed .
  • 3 medium tomatoes, cut into 1-inch pieces .
  • 1/4 tsp pepper .
  • 2/3 c grated parmesan cheese .
  • 2 tbsps olive oil or vegetable oil .
  • 2 garlic cloves, finely sliced .
  • 1 (16 oz) package spaghetti .
  • 1 medium onion, sliced (1/2 c) .
  • 1/2 tsp salt .
  • 2 medium zucchini, cut into 1/2-inch slices (4 c)

Directions
  • Step #1 Cook & drain spaghetti as directed on package.
  • Step #2 While spaghetti is cooking, heat oil in 10-inch skillet over medium-high heat.
  • Step #3 Cook carrots, onion, stirring frequently, zucchini & garlic in oil, until vegetables are crisp-tender.
  • Step #4 Stir in remaining ingredients except cheese; cook this until hot.
  • Step #5 Serve vegetable mixture over spaghetti.
  • Step #6 Sprinkle top with cheese.
