Granny Foster's Refrigerator Rolls Recipe

Ingredients
  • 11 tbsps unsalted butter, plus .
  • 2 c milk .
  • 1 tsp salt .
  • 1 tbsp vegetable oil .
  • 1 (1/4 oz) package dry yeast (quarter oz package) .
  • 1/2 c warm water (105 to 115) .
  • more all-purpose flour, for kneading .
  • 1 tbsp sugar .
  • more unsalted butter, for baking sheet .
  • 6-6 1/2 c all-purpose flour, plus

Directions
  • Step #1 Combine water, yeast, & 1 tsp of sugar in a small bowl; stir this to mix.
  • Step #2 Let stand in a warm place until small bubbles form on the surface, about 5 mins.
  • Step #3 Meanwhile, 8 tbsps (1 stick) butter, heat milk, salt, & remaining 2 tsps of sugar in a small saucepan over very low heat.
  • Step #4 Cook, stirring constantly, until sugar has dissolved & butter has melted.
  • Step #5 Be sure not to let the mixture become hotter than 115°, or it will kill the yeast.
  • Step #6 Remove from heat, & pour this into a large bowl; add the yeast mixture.
  • Step #7 Stir until mixd.
  • Step #8 Add 6 c flour, & stir until mixture forms a soft dough.
  • Step #9 It may be necessary to add the remaining 1/2 c flour.
  • Step #10 Transfer mixture to a lightly floured work surface, & knead until the dough is smooth, 5 to 8 mins.
  • Step #11 Lightly oil a large bowl, & place dough in bowl.
  • Step #12 Cover up, & let rise in a warm place until doubled in size, 30 to 45 mins.
  • Step #13 At this point, tightly covered, dough may be stored, in the refrigerator for up to 2 weeks.
  • Step #14 Allow dough to reach room temperature before proceeding with the recipe.
  • Step #15 Punch dough down, & divide equally in half.
  • Step #16 Place on a clean work surface, & cover loosely with a kitchen towel or inverted bowl.
  • Step #17 Let rest for 5 to 10 mins.
  • Step #18 Preheat oven to 375°.
  • Step #19 Lightly butter a baking sheet; set aside.
  • Step #20 Melt remaining 3 tbsps butter; set aside.
  • Step #21 Working with one piece of dough at a time, roll out on a lightly floured work surface until 3/4 inch thick.
  • Step #22 Using a 2 1/2-inch biscuit cutter, cut out about 2 dozen rolls.
  • Step #23 Place rolls on prepared baking sheet, & let rise until rolls have doubled in size, 15 to 20 mins.
  • Step #24 Brush tops lightly with melted butter.
  • Step #25 Repeat with remaining dough.
  • Step #26 Bake until golden brown, 15 to 20 mins.
  • Step #27 Serve as soon as possible.
