Sweet Carrots With Pecans Recipe

Ingredients
  • 1/2 tsp ground allspice .
  • 3 tbsps butter .
  • 2 lbs carrots, sliced (or 2 lbs baby carrots) .
  • 1/2-3/4 tsp salt .
  • 1 c pineapple juice (or orange juice) .
  • 1/2 c brown sugar .
  • 1/2 c sliced pecans .
  • 1 1/2 tsps cornstarch .
  • 3/4 tsp ground cinnamon

Directions
  • Step #1 In a large saucepan, cook sliced carrots in boiling water until tender.
  • Step #2 Drain & set aside.
  • Step #3 In the same saucepan, salt, cornstarch, mix pineapple juice, butter, brown sugar, cinnamon, & allspice.
  • Step #4 Bring to a boil, reduce the heat, uncovered, & let simmer, for 5 mins.
  • Step #5 Remove from heat.
  • Step #6 Add the cooked, drained carrots & sliced pecans to hot sauce mixture; stir in the & heat through.
  • Step #7 Serve.
