Irish Farm House Cheese Parcel Recipe

Ingredients
  • 1/2 a peeled carrot .
  • 4 tbsps olive oil .
  • 1 tbsp white wine vinegar .
  • Dressing .
  • 1 pinch salt .
  • 3 oz of cashel blue cheese (1 rectangular slice) .
  • 2 oz butter .
  • 1 pinch fresh ground pepper .
  • egg wash .
  • 1 tsp caster sugar .
  • Salad .
  • 1 leaf phyllo pastry (6 in sq.) .
  • 3 oz monterey jack cheese (1 rectangular slice) .
  • 3 oz gouda cheese (1 rectangular slice) .
  • 1/2 a peeled parsnip .
  • 1 tbsp balsmic vinegar .
  • 2 tbsps sliced fresh herbs .
  • 1/2 a courgette (otherwise known as zucchini)

Directions
  • Step #1 Make a fine julienne of the vegetables.
  • Step #2 Stack the three cheese with the Cashel Blue in the middle.
  • Step #3 Wrap in the Filo Pastry & seal the parcel.
  • Step #4 Brush with the egg wash.
  • Step #5 Place in a small heated oven-safe pan that contains a little oil.
  • Step #6 Let it sit while you prepare the dressing.
  • Step #7 Broil the parcel for five to seven mins or until the pastry puffs up & turns a lovely golden brown.
  • Step #8 Toss the salad in the dressing.
  • Step #9 To serve, place the salad on the plate like a small hay stack.
  • Step #10 Arrange the cheese parcel either on top of the veggies or beside them.
  • Step #11 Note: The jack & gouda replace the original cheeses of Milleens & Durras.
