Cabbage Rolls
Ingredients
2 tsps minced garlic .
1/4 tsp black pepper .
2 tbsps olive oil .
1/2 tsp salt .
3 tbsps sugar free ketchup .
1 (28 oz) can of peeled tomatoes with juice .
Ground Beef filling .
1/2 c minced onions .
1 c canned tomato sauce .
1 head green cabbage, 2lb .
1/4 c sugar twin brown sugar substitute .
For the Tomato sauce .
1/4 c Quaker Oats .
1 tsp minced garlic .
1 c sliced onions .
1 1/4 lbs ground round .
1 tbsp dried dill .
2 large eggs, lightly beaten
Directions
Step #1 Prepare the sauce.
Step #2 Saute onions & garlic in olive oil over med-heat/flame until soft & lightly browned.
Step #3 Break up the tomatoes with your hands & add to pan with the juice, canned tomato sauce, & Sugar Twin.
Step #4 Spice up with salt & pepper.
Step #5 Reduce the heat to low, cover the pot,and let simmer carefully for about 45 mins.
Step #6 Preheat oven to 400F degrees f.
Step #7 Prepare the cabbage: Bring a large pot of salted water to a boil.
Step #8 Cut core from cabbage & place this into water.
Step #9 As leaves become softened, remove & place this in colinder.
Step #10 Prepare the filling:.
Step #11 Place all filling ingredients into a large bowl & mix well with your hands.
Step #12 Assemble the cabbage rolls:.
Step #13 Take a large cabbage leaf & carefully cut out the large stiff vein at the base.
Step #14 Place about 1/3 c of filling near stem end of leaf.
Step #15 Mold the filling to a log shape with your hands.
Step #16 Fold sides of leaf over filling, then roll up & set aside seam side down.
Step #17 Repeat until all filling is used up.
Step #18 Tear up some of the remaining leaves to line a baking pan.
Step #19 Place rolls seam side down in pan.
Step #20 Pour sauce over all.
Step #21 Cover up with more torn leaves.
Step #22 Cover up tightly with foil wrap.
Step #23 Bake about 45 mins or until meat thermometer inserted in roll reaches 180 degrees.
