Ingredients
2 tsps salt
1 tbsp chili powder
1/2 c red wine
1 pinch dried oregano
7 sun-dried tomatoes, softened & sliced
1 pinch white sugar
ground black pepper to taste
1 bay leaf
2 tbsps balsamic vinegar
2 tbsps tomato paste
1 (15 oz) can black beans, drained
1 (28 oz) can stewed tomatoes, lightly drained
2 lbs ground beef
1 1/2 c beef stock
6 cloves garlic, minced
1 pinch dried sage
2 tbsps olive oil
1 small onion, minced
1/4 tsp cayenne pepper
Directions
Step #1 In a large Dutch oven, heat the olive oil over med-heat/flame.
Step #2 Brown the ground beef until no longer pink.
Step #3 Drain most of the fat from the ground beef.
Step #4 Push the ground beef to the sides of the pan & saute the onion & garlic in the middle until softened.
Step #5 Pour in beef stock, red wine, & balsamic vinegar.
Step #6 Stir in tomatoes, sun-dried tomatoes, tomato paste & black beans.
Step #7 Mix thoroughly.
Step #8 Sprinkle top in the cayenne pepper, pepper, oregano, chili powder, sage & sugar, salt, then add the bay leaf.
Step #9 Mix thoroughly.
Step #10 Cover & let simmer on lowest heat for 45 to 90 mins.
