Ingredients
  • 2 tsps salt
  • 1 tbsp chili powder
  • 1/2 c red wine
  • 1 pinch dried oregano
  • 7 sun-dried tomatoes, softened & sliced
  • 1 pinch white sugar
  • ground black pepper to taste
  • 1 bay leaf
  • 2 tbsps balsamic vinegar
  • 2 tbsps tomato paste
  • 1 (15 oz) can black beans, drained
  • 1 (28 oz) can stewed tomatoes, lightly drained
  • 2 lbs ground beef
  • 1 1/2 c beef stock
  • 6 cloves garlic, minced
  • 1 pinch dried sage
  • 2 tbsps olive oil
  • 1 small onion, minced
  • 1/4 tsp cayenne pepper

Directions
  • Step #1 In a large Dutch oven, heat the olive oil over med-heat/flame.
  • Step #2 Brown the ground beef until no longer pink.
  • Step #3 Drain most of the fat from the ground beef.
  • Step #4 Push the ground beef to the sides of the pan & saute the onion & garlic in the middle until softened.
  • Step #5 Pour in beef stock, red wine, & balsamic vinegar.
  • Step #6 Stir in tomatoes, sun-dried tomatoes, tomato paste & black beans.
  • Step #7 Mix thoroughly.
  • Step #8 Sprinkle top in the cayenne pepper, pepper, oregano, chili powder, sage & sugar, salt, then add the bay leaf.
  • Step #9 Mix thoroughly.
  • Step #10 Cover & let simmer on lowest heat for 45 to 90 mins.
