Chicken Strata, Mexican Style Recipe

Ingredients
  • guacamole .
  • 2 1/4 c whole milk .
  • 10 slices sourdough French bread, crusts removed if desired, divided .
  • 4 large eggs .
  • sour cream .
  • 2 c medium salsa, divided .
  • 1 (4 oz) can sliced green chilies, drained .
  • 1 c sliced green onions, divided .
  • 1 (15 oz) can black beans, drained & rinsed, divided .
  • 3 c grated monterey jack cheese, divided .
  • fresh ground pepper .
  • 2 c cubed cooked chicken breasts, divided .
  • 1/2 tsp salt

Directions
  • Step #1 Place/fit half the bread into a 13 x9 inch baking dish that has been lightly oiled or sprayed with nonstick cooking spray (the slices can overlap slightly).
  • Step #2 Top with half the cheese, half the salsa, half the chicken, half the green onions, & half the beans.
  • Step #3 Repeat layers.
  • Step #4 In a bowl, milk, chiles, whisk the eggs, salt, & pepper together.
  • Step #5 Pour over top of bread mixture.
  • Step #6 Cover up & put in the fridge for several hrs or overnight.
  • Step #7 Preheat oven to 375°; bring strata to about room temp.
  • Step #8 Bake, uncovered, for 50-55 mins or until set & bubbly.
  • Step #9 Let stand 10 mins then cut into squares;.
  • Step #10 Serve with guacamole & sour cream.
