Cinnamon And Lime Chicken Fajitas Recipe

Ingredients
  • 12 (6 inch) corn tortillas, warmed
  • 2 large baking potatoes, peeled & cubed
  • 1/4 c canola oil
  • 1 tbsp sliced jalapeno peppers
  • 1 large clove garlic, peeled & minced
  • 4 boneless, skinless chicken breast halves
  • 1 tbsp ground cinnamon
  • 1 lime, juiced
  • salt & pepper to taste
  • 1 large yellow onion, sliced

Directions
  • Step #1 Preheat oven to 400F degrees F (200 degrees C).
  • Step #2 Place potatoes in a shallow baking dish.
  • Step #3 Drizzle with about 1/2 the oil, & season this with salt.
  • Step #4 Bake 30 to 40 mins in the preheated oven, until tender.
  • Step #5 Meanwhile, salt, season chicken with cinnamon, & pepper.
  • Step #6 Arrange in a separate baking dish, & bake 30 mins in the preheated oven, until no longer pink & juices run clear.
  • Step #7 Cool & shred.
  • Step #8 Heat remaining oil in a skillet over med-heat/flame, & saute onion & garlic until tender.
  • Step #9 Mix in shredded chicken, jalapeno, & lime juice.
  • Step #10 Cook until heated through.
  • Step #11 Serve the chicken & potatoes in warmed tortillas.
