Succulent Chicken Sandwiches Recipe

Ingredients
  • 12 tomatoes, slices .
  • 6 lettuce leaves .
  • honey mustard dressing (Honey Mustard Dressing) .
  • 6 sandwich buns, split .
  • 1/4 tsp cayenne pepper .
  • 1/2 c Bisquick reduced-fat baking mix .
  • 3/4 tsp poultry seasoning .
  • 3/4 tsp salt .
  • 6 red onions, slices .
  • 1/2 tsp garlic powder .
  • 1 1/2 tsps paprika .
  • 1/2 c cornmeal .
  • 1 c 1% fat buttermilk .
  • 6 (4 oz) boneless skinless chicken breast halves .
  • 1/2 tsp pepper

Directions
  • Step #1 Pound chicken to 1/2 inch thickness.
  • Step #2 Pour buttermilk into a large resealable plastic bag; add chicken.
  • Step #3 Seal bag & turn to coat; put in the fridge for 8 hrs or overnight.
  • Step #4 In a shallow bowl, cornmeal, paprika, garlic powder, pepper, mix the bisquit mix, poultry seasoning, salt, & cayenne.
  • Step #5 Remove chicken once piece at a time, allowing excess buttermilk to drain off.
  • Step #6 Discard buttermilk.
  • Step #7 Coat chicken with the cornmeal mixture; place this in a 9x13 baking dish coated with nonstick cooking spray.
  • Step #8 Bake uncovered at 400F for 12 mins.
  • Step #9 Turn chicken & bake 8-12 mins longer or until coating is lightly browned & juices run clear.
  • Step #10 Serve on buns with lettuce, tomato, onion, & honey mustard.
