Icebox Banana Cake W/ Chocolate Cream Recipe

Ingredients
  • 3/4 c melted semi-sweet chocolate chips .
  • 1 1/2 c flour .
  • 2 c heavy whipping cream .
  • 3 tbsps pecans .
  • 1 c mashed ripe bananas (if your banans start getting old & brown, put them in the freezer so you can make this treat later) .
  • 1 tsp baking soda .
  • Optional .
  • Cake .
  • 1 banana, thinly sliced .
  • 2 eggs .
  • 1 1/2 tsps vanilla .
  • 1 c sugar .
  • Cream .
  • 1/4 c sour cream .
  • 2/3 c soft butter .
  • 4 tbsps powdered sugar .
  • 1/2 c chocolate chips

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Combine sugar, butter, & vanilla.
  • Step #3 Beat until fluffy (about 2 mins).
  • Step #4 Add eggs one at a time.
  • Step #5 Beat two more mins.
  • Step #6 Stir in mashed bananas & sour cream.
  • Step #7 Fold in flour & baking soda.
  • Step #8 Pour into two greased 8 inches round pans.
  • Step #9 Bake 25-30 mins.
  • Step #10 While the cakes are cooling:.
  • Step #11 Beat Whipping cream in a cold bowl on high until peaks form.
  • Step #12 add sugar & vanilla.
  • Step #13 Beat till stiff peaks (2 mins).
  • Step #14 Add melted chips & mix well.
  • Step #15 Store in fridge until cakes are completly cool.
  • Step #16 Place one cake on plate & frost.
  • Step #17 Place second cake on top & frost making sure to cover the sides.
  • Step #18 Store loosly wrapped in fridge.
  • Step #19 Optional: Just before serving decorate with fresh banana slices, pecans, & chocolate chips.
