Mushrooms Aux Croustade Recipe

Ingredients
  • 1 c dry white wine .
  • salt .
  • 5 tbsps unsalted butter .
  • 4 c sliced white mushrooms .
  • 4 garlic cloves, sliced .
  • 2 shallots, minced .
  • 3 tbsps parsley, sliced .
  • 1 baguette .
  • pepper

Directions
  • Step #1 Cut baguette into 1/4" slices.
  • Step #2 Brown in oven or under broiler until golden.
  • Step #3 Set baguette slices aside.
  • Step #4 Saute small batches of mushrooms in butter in a heavy pan on high heat until browned & releasing juice.
  • Step #5 Add shallots & garlic when mushrooms are nearly done.
  • Step #6 Deglaze pan with white wine, leaving vegetable in pan.
  • Step #7 Add parsley, season to taste with salt & pepper.
  • Step #8 Serve separately if desired or top browned baguette with mushroom mixture.
