Moroccan Lamb With Apricots Recipe

Ingredients
  • 2 garlic cloves, crushed .
  • 4 tbsps olive oil .
  • 5 tbsps orange juice .
  • 1 tsp ground cumin .
  • 1 tbsp sliced fresh cilantro .
  • 1 tsp cooking salt .
  • 1 pinch of freshly grated nutmeg .
  • 2 tbsps sesame seeds, to garnish .
  • 2 c broth .
  • 1 tsp fresh ground black pepper .
  • 1/4 c pitted dried dates, coarsely sliced .
  • 1 tbsp sliced fresh mint (optional) .
  • 1 1/2 lbs lean lamb, cubed .
  • 1 onion, thinly sliced .
  • 1/2 c dried apricots, soaked overnight just covered by water

Directions
  • Step #1 In a large non-metallic dish, mix the lamb with the garlic, orange juice, 2 tbsps olive oil, the herbs & spices.
  • Step #2 Cover up & leave overnight in the refrigerator, stirring every once in awhile.
  • Step #3 Bring to about room temp when ready to cook & place on a medium heat to bring it to the boil.
  • Step #4 Once at the boil quickly reduce the heat to simmer & let simmer 2 hrs; uncovered for final 30 mins or until the lamb is extremely tender.
  • Step #5 Taste for salt as your broth may be salty or not, before adding salt though cooking salt is a bit less "salty.
  • Step #6 " To approximate Moroccan cooking salt use a kosher flaked cooking salt.
  • Step #7 Do stir quite every once in awhile & keep the heat low due to the natural sugar content.
  • Step #8 Cooking time includes 24 hrs in the refridgerator.
