Creamy Succotash With Bacon, Thyme & Chives Recipe

Ingredients
  • Salt & freshly ground black pepper, to taste
  • 1 medium onion, cut into medium dice
  • 1 (10 oz) package frozen baby lima beans
  • 2 tsps snipped fresh chives
  • 1 1/2 tsps minced fresh thyme leaves
  • 1 (10 oz) package frozen sweet corn
  • 4 oz thick sliced bacon, cut into 1/2-inch pieces
  • 1/2 c heavy cream

Directions
  • Step #1 Fry bacon over medium-high heat in a Dutch oven until crisp, 7 to 8 mins.
  • Step #2 Using a slotted spoon, transfer bacon to a paper towel-lined plate.
  • Step #3 Pour off all but 2 Tbs.
  • Step #4 of the bacon drippings.
  • Step #5 Add onions; saute until tender, about 5 mins.
  • Step #6 Add lima beans, salt & pepper, 1/2 c water, & bring to a boil.
  • Step #7 Reduce heat & continue to simmer, until partially cooked, covered, about 5 mins.
  • Step #8 Add corn, & warm until vegetables are fully cooked & cream doesn't pool, & thyme; return to a simmer, cream, about 5 mins longer.
  • Step #9 (Can be put in the fridged at this point up to 2 days ahead.
  • Step #10 ) When ready to serve, stir bacon & chives into warm succotash.
  • Step #11 This recipe doubles easily.
