Skirt Steak Saltimbocca Recipe

Ingredients
  • 12 slices prosciutto .
  • 6 oz aged provolone cheese, sliced .
  • 1/4 c extra-virgin olive oil .
  • 2 lbs skirt steaks, trimmed well of fat .
  • fresh ground black pepper, to taste .
  • 2 bunches fresh sage

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Cut the steak into 3 1/2 to 4-oz pieces.
  • Step #3 Pound each steak out evenly to about 25 percent of its original thickness.
  • Step #4 Spice up them with pepper.
  • Step #5 On top of each steak place a slice of provolone, some sage leaves, & 2 slices prosciutto.
  • Step #6 Roll them up into a pinwheel (log) & secure with toothpicks.
  • Step #7 Heat the oil in a skillet over medium-high heat & sauté the pinwheels until they are brown on both sides.
  • Step #8 Place them in the oven & roast until they are medium rare, about 7-9 mins.
  • Step #9 Let the steaks rest for 5 mins before carving them into bite-sized wheels.
  • Step #10 Put the skillet back on medium-high heat.
  • Step #11 Add the remaining sage leaves & cook this until they are crispy.
  • Step #12 Drain them on paper towels; use them to garnish steak.
