Lamb Chops My Way (parmesan Herb Crusted) Recipe

Ingredients
  • 4 sprigs mint (to garnish) .
  • 1/2 c fresh breadcrumbs .
  • 8 lamb rib chops (cut from a rack of lamb, cutting between the rack bones) .
  • 1/2 tsp salt .
  • 2 large eggs, beaten .
  • 1/4 c finely sliced flat leaf parsley .
  • 1 pinch fresh ground black pepper .
  • 1/4 c finely sliced fresh mint .
  • 3 tbsps olive oil .
  • 1/2 c freshly grated parmesan cheese

Directions
  • Step #1 Heat oven to 450*F.
  • Step #2 In a medium bowl mix the fresh herbs & set aside.
  • Step #3 In another bowl mix the bread crumbs & cheese & set aside.
  • Step #4 Place the beaten eggs in a third bowl.
  • Step #5 Spice up the chops on each side with the salt & pepper.
  • Step #6 Press the fresh herbs into each side of the chops, covering completely.
  • Step #7 Dip chops into the beaten egg & then into the bread crumb mixture, coating them well.
  • Step #8 In a large nonstick skillet with a heat resistant handle, heat olive oil over medium high heat.
  • Step #9 Add chops & cook this until lightly browned, about 2 mins on each side.
  • Step #10 Carefully turn the chops & brown the edges, about 30 seconds.
  • Step #11 Transfer the skillet to the oven & finish cooking the chops until medium rare, about 2 mins.
