Baked Sweet Potato With Honey Yogurt And Walnuts Recipe

Ingredients
  • 1/4 c plain yogurt .
  • 1 tbsp honey .
  • 3 tbsps walnuts, coarsely sliced .
  • 1 tsp Dijon mustard .
  • 1 small sweet potato (4 oz)

Directions
  • Step #1 Scrub the sweet potato under running water.
  • Step #2 Dry & wrap in foil wrap.
  • Step #3 Bake in a 400-degree oven for 40-45 mins or until soft.
  • Step #4 In the meantime, mix the yogurt, honey & mustard together.
  • Step #5 (*mustard is optional in this step, but is best to use mustard the first time to determine if you like that flavor*).
  • Step #6 Set aside.
  • Step #7 Put the walnuts on a small baking sheet or pie plate.
  • Step #8 Toast them in the oven for 5-7 mins near the end of the sweet potato cooking time.
  • Step #9 Shake them every once in awhile & watch them so they don't burn.
  • Step #10 To serve, cut the sweet potato in half, spoon with the yogurt sauce & sprinkle with the toasted walnuts.
