Mushroom And Jack Cheese Quesadilla Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1 1/2 c shredded monterey jack cheese .
  • 2 jalapeno peppers, seeded & sliced .
  • sliced tomatoes .
  • 1/3 c light mayonnaise .
  • 1 medium onion, sliced .
  • 6 oz sliced portabella mushrooms .
  • 1 garlic clove, minced .
  • salt & pepper .
  • avocados, slices .
  • cilantro .
  • 6 oz sliced white mushrooms .
  • 4 burrito-size flour tortillas

Directions
  • Step #1 1.
  • Step #2 Heat oil in large nonstick skillet over medium high heat.
  • Step #3 2.
  • Step #4 Add the garlic, peppers, mushrooms, onions, salt & pepper.
  • Step #5 Cook, stirring every once in awhile, 7 - 9 mins or until soft.
  • Step #6 3.
  • Step #7 Transfer to a bowl & cool, then stir in the mayo.
  • Step #8 4.
  • Step #9 Have another nonstick skillet heated to medium to warm tortillas.
  • Step #10 For each tortilla, add 1/4 of the shredded jack cheese until it melts; fill with 1/4 of mushroom mixture & fold tortilla in half.
  • Step #11 Grill another 1 - 2 mins on each side.
  • Step #12 Repeat for each tortilla.
  • Step #13 If desired, tomato, top this with avocado, & cilantro.
