My Best Blueberry Buttermilk Pancakes Recipe

Ingredients
  • 1 tsp vanilla .
  • 1 1/2 c blueberries .
  • 1 1/2 tsps baking soda .
  • 1 1/2 tsps baking powder .
  • 1 c flour .
  • 1/2 tsp salt .
  • 1/4 tsp cinnamon .
  • 1/8 tsp nutmeg .
  • 1 large egg .
  • 1 tbsp light brown sugar .
  • 1 c buttermilk .
  • 2 tbsps vegetable oil

Directions
  • Step #1 In medium or large bowl, baking powder, whisk flour, baking soda, salt, cinnamon & nutmeg.
  • Step #2 In small or medium-sized bowl, whisk egg until fluffy.
  • Step #3 Whisk in buttermilk, light brown sugar, oil & vanilla.
  • Step #4 Pour wet ingredients over dry & whisk just until all is moistened but batter is still slightly lumpy.
  • Step #5 Fold in whole berries.
  • Step #6 Scoop batter onto hot non-stick griddle over medium-low heat & cook this until golden brown on both sides, turning once.
  • Step #7 Serve with softened butter & warm maple syrup.
  • Step #8 Makes 10 small pancakes, or about 7 medium using a 1/3 measuring c for pouring.
  • Step #9 *Don't cook these over too high of heat, they won't get done on the inside.
  • Step #10 Cook over medium-low.
