Spinach And Turkey Skillet For 2 Recipe

Ingredients
  • 1/4 tsp black pepper .
  • 3/4 tsp dried Italian seasoning .
  • 6 oz turkey breast tenderloins .
  • 2 c torn fresh spinach leaves .
  • 1/8 tsp salt .
  • 3 tbsps freshly grated parmesan cheese .
  • 2 tsps olive oil .
  • 2/3 c sliced plum tomatoes .
  • 1/3 c uncooked rice .
  • 2 garlic cloves, minced .
  • 1/4 c sliced onions .
  • 1 c reduced-sodium fat-free chicken broth, divided

Directions
  • Step #1 Cut turkey tenderloins into bite-sized pieces; sprinkle with salt.
  • Step #2 Heat oil in medium skillet over medium-high heat.
  • Step #3 Add turkey pieces; cook & stir until lightly browned.
  • Step #4 Remove from skillet.
  • Step #5 Reduce heat to low.
  • Step #6 Add onion & garlic; cook & stir until tender.
  • Step #7 Return turkey to skillet.
  • Step #8 Stir in rice, Italian seasoning & pepper.
  • Step #9 Reserve 2 tbsps chicken broth.
  • Step #10 Stir remaining broth into mixture in skillet.
  • Step #11 Bring to a boil.
  • Step #12 Reduce heat; simmer, covered, 14 mins.
  • Step #13 Stir in spinach & reserved broth.
  • Step #14 Cover up; cook 2 to 3 mins or until liquid is absorbed & spinach is wilted.
  • Step #15 Stir in tomatoes; heat through.
  • Step #16 Serve with Parmesan cheese.
