Carrot Latkes Recipe

Ingredients
  • salt .
  • 1/2 c oil (for frying) .
  • 1 lb carrots .
  • 1/2-3/4 c matzo meal .
  • pepper .
  • 1/4 c scallions, sliced (for garnish) .
  • 1/2 garlic clove .
  • 1 scallion, finely sliced .
  • 2 eggs .
  • 1/2 c sour cream (for garnish)

Directions
  • Step #1 Clean, scrape, & grate carrots.
  • Step #2 Transfer to a large sieve, & press against them to drain any liquid.
  • Step #3 Allow to drain for approximately 10 mins.
  • Step #4 Beat eggs In a large-ish bowl.
  • Step #5 Add drained carrots, the finely sliced scallion, garlic, salt & pepper to taste.
  • Step #6 Mix, & add enough matza meal so that the mixture is pretty firm when shaped into a pancake.
  • Step #7 Heat oil in skillet over med-heat/flame.
  • Step #8 Using about 2 tbsps of the carrots mixture for each, drop the latkes into the hot oil & fry until golden brown on both sides.
  • Step #9 Remove from skillet & drain on paper towels.
  • Step #10 Serve, garnishing with sour cream & sliced scallions.
