Gary Rhodes - Sweet Cherry Tomatoes With Melting Mozzarella Recipe

Ingredients
  • olive oil, for dressing .
  • fresh ground black pepper, to taste .
  • For the basil oil .
  • 50 g basil leaves .
  • brown sugar, for sprinkling .
  • coarse sea salt .
  • 350-450 g cherry tomatoes .
  • 4 lemon wedges .
  • 100 ml olive oil .
  • 2-3 oz buffalo mozzarella

Directions
  • Step #1 Preheat the grill.
  • Step #2 Halve the cherry tomatoes horizontally, placing them on a very shallow large serving dish or plate.
  • Step #3 Slice the mozzarella reasonably thinly.
  • Step #4 To make the basil oil, place the basil leaves in a small processor.
  • Step #5 Warm the olive oil & pour over the leaves.
  • Step #6 Spice up with salt & pepper & mix the basil to a purée.
  • Step #7 Strain through a sieve & set aside.
  • Step #8 Drizzle olive oil over the tomatoes, placing a nugget of sea salt on each half.
  • Step #9 Grind some pepper on the top & sprinkle with sugar.
  • Step #10 Place under a hot grill.
  • Step #11 Once they begin to sizzle, remove this from grill & place mozzarella on top of the tomatoes.
  • Step #12 Replace dish under the grill, until cheese has melted.
  • Step #13 Serve with basil oil & bread.
