Harriet's Bran Muffins Recipe

Ingredients
  • 1 pint buttermilk .
  • 1 c boiling water .
  • 2 1/2 tsps baking soda .
  • 1/2 tsp salt .
  • 1 c bran buds .
  • 2 1/2 c flour, sifted .
  • 1/2 tsp allspice .
  • 2 eggs .
  • 1 1/4 c sugar .
  • 1/2 c Crisco, heaping .
  • 2 c all-bran cereal

Directions
  • Step #1 Preheat oven to 400.
  • Step #2 Sift flour, baking soda, & salt together.
  • Step #3 Mix together boiling water & all bran.
  • Step #4 cream together crisco, sugar, eggs, & buttermilk in a separate large bowl.
  • Step #5 Add bran mixture, allspice, baking soda, bran buds, flour, & salt.
  • Step #6 Mix only until flour is absorbed.
  • Step #7 Fill muffin tins 2/3 full.
  • Step #8 Use as much as needed & store extra in refrigerator for up to two weeks.
  • Step #9 Bake at 400F & check after 15 mins, may need an extra few mins to bake.
