Step #1 Combine the first measure of breadcrumbs, oregano, parsley & parmesan in a shallow dish & mix well.
Step #2 In another shallow dish place the beaten eggs.
Step #3 In a third shallow dish put the second measure of breadcrumbs.
Step #4 Coat the schnitzels both sides with the plain breadcrumbs.
Step #5 Dip into the beaten egg & then coat with the herb & cheese breadcrumb mix.
Step #6 Lay the coated schnitzels on a flat tray or plate in a single layer & chill in the refrigerator for at least 20mins.
Step #7 Do not skip this step!
Heat the oil or butter or a mix of both In a large-ish frying pan & cook the schnitzels for 3-5 mins on each side, until golden & cooked through.
Step #8 Serve with a fresh lemon wedge to squeeze extra juice over if desired.
Step #9 *Note -- Prep time includes chilling time.
