Fantastic Pumpkin Dessert Squares With Shortbread Crust Recipe

Ingredients
  • 1/4 c butter or margarine, melted .
  • 1 1/2 tsps vanilla .
  • 1 pinch salt .
  • 1 c whipping cream (whipped, to taste) .
  • 1 c flour .
  • 1 c canned pumpkin puree .
  • 1 (8 oz) package cream cheese, softened .
  • 1 tbsp flour .
  • 1/3 c sugar .
  • SHORTBREAD CRUST .
  • 1/3 c cold butter, cut into small pieces (no subs!) .
  • 1 1/2-2 tsps cinnamon .
  • 2 tbsps sugar .
  • 3/4 c sugar .
  • PUMPKIN FILLING .
  • 1 1/4 tsps allspice .
  • 2 large eggs

Directions
  • Step #1 Set oven to 350 degrees.
  • Step #2 Set oven to second-lowest position.
  • Step #3 Butter an 8 x 8-inch baking pan.
  • Step #4 To make the crust: process all crust ingredients on a food processor/blender for about 30 seconds until well mixed.
  • Step #5 Press the mixture lightly into the prepared baking pan.
  • Step #6 Bake crust for 15 mins, then remove this from oven.
  • Step #7 Meanwhile prepare the filling.
  • Step #8 With an electric mixer, beat the softened cream cheese with 3/4 c plus 2 tbsps sugar for about 2 mins.
  • Step #9 Add in eggs & beat well until mixd.
  • Step #10 Add in the pumkin puree, vanilla & melted butter; mix until mixd.
  • Step #11 In a small c mix flour, cinnamon & allspice, then add to the pumpkin mixture; mix about 1-2 mins.
  • Step #12 Pour over the partially baked crust, & return to oven for about 30-35 mins, or until just set.
  • Step #13 Serve at about room temp or chilled, cut into squares with a dollup of whipped cream on top.
