Mushroom Pie Recipe

Ingredients
  • Filling .
  • 8 c sliced mushrooms .
  • 1 egg .
  • 8 oz cream cheese .
  • 2 1/2 c sliced onions .
  • 1/2 tsp salt .
  • 1 tbsp milk .
  • 2 1/2 c flour .
  • 1 c butter .
  • Glaze .
  • lots fresh ground black pepper .
  • 1 c sour cream .
  • Crust .
  • flour, for coating the dough & board for rolling .
  • 3 tbsps butter .
  • 1/4 tsp salt .
  • 1 tsp dried thyme .
  • 2 tsps baking powder

Directions
  • Step #1 Saute the onions in butter In a large-ish skillet.
  • Step #2 When the onions are soft & translucent, add the mushrooms & thyme & suate for a few more mins, until the mushrooms release their juices.
  • Step #3 Add the seasonings.
  • Step #4 Cut the cream cheese into small pieces & stir it into the mushrooms until it melts.
  • Step #5 Remove from the heat & set aside until crust is ready.
  • Step #6 Preheat oven to 400°F.
  • Step #7 For the crust, mix the flour, baking powder & salt In a large-ish mixing bowl.
  • Step #8 Cut in the butter just enough to achieve a crumbly mix.
  • Step #9 Stir in the sour cream to form a soft dough.
  • Step #10 Generously dust the dough with flour & form into a ball.
  • Step #11 On a heavily floured surface, roll out 2/3 of the dough to fit a 10 inch pie plate.
  • Step #12 Trim the edges.
  • Step #13 Fill with the mushroom mixture.
  • Step #14 Roll out the remaining dough about 1/4 inch thick (Thicker than normal pie crust) & cut into strips 1 inch wide.
  • Step #15 Weave the strips into a lattice over the filling.
  • Step #16 Fold the ends of the lattice strips under the bottom crust, pinch the edges together, & flute.
  • Step #17 For the glaze, beat the egg & milk.
  • Step #18 With a pastry brush, thoroughly coat the pie crust.
  • Step #19 (You will have more glaze than you will need).
  • Step #20 Bake the pie for 25-35 mins, until the crust is puffy & golden.
