Ingredients

2 tsps baking powder .
1/2 c butter or margarine, melted .
1 lb mochiko sweet rice flour .
2 tsps lemon extract .
5 eggs, beaten .
1 tsp vanilla .
2 1/2 c sugar .
1 c flaked coconut .
3 c milk

Directions

Step #1 Preheat electric oven to 350°F Grease a 13 x 9 x 2-inch pan.
Step #2 In a large bowl, mix mochiko, sugar, & baking powder.
Step #3 Add remaining ingredients; mix well.
Step #4 Pour into prepared pan.
Step #5 Bake for 1 hr; cool.
