Ingredients
1/2 c grated parmesan cheese .
sliced fresh basil (to garnish) .
2 garlic cloves, minced (or pressed) .
1 tsp olive oil .
6 large ripe tomatoes .
1 1/2 c fresh basil leaves, packed .
salt & freshly ground black pepper .
PESTO .
1/2 c sliced kalamata olives .
1 dash salt & fresh ground pepper .
1/4 c olive oil .
1/3 c tiny cubes feta cheese .
1 1/2 c raw orzo pasta .
2 quarts water .
1/4 c pistachio nuts
Directions
Step #1 Brint the water to a boil In a large-ish pot.
Step #2 Add the orzo, stir, lower the heat, & let simmer for about 7 mins, cover, stirring as needed.
Step #3 While the orzo cooks, mix the basil leaves, garlic, pistachios & parmesan in a food processor/blender.
Step #4 Whirl until well sliced.
Step #5 Add the olive oil through the hopper in a thin stream to make a smooth paste, stopping to scrape down the sides a couple of times as needed.
Step #6 Spice up to taste with salt & pepper.
Step #7 Drain the orzo.
Step #8 Toss it lightly with the tsp of olive oil & let cool to about room temp.
Step #9 With a sharp serrated knife, cut a slice about 2 inched across in the top of each tomato & remove the core.
Step #10 Scoop out the pulp with a small spoon or melon baller, leaving a 1/2 inch thick shell.
Step #11 Lightly sprinkle the insides of the tomatoes with salt & pepper.
Step #12 Mix the cooled orzo with the Pesto & feta cheese cubes.
Step #13 Taste for seasoning & adjust as necessary.
Step #14 Stuff each tomato with about a c of the filling.
Step #15 Sprinkle top the tops with the olives & garnish with the sliced basil.
