Ingredients
1 c sugar .
2 large ripe plums, pitted .
1 egg .
2 c flour .
1 pinch freshly grated nutmeg .
1 tsp salt .
3 tsps ground cinnamon .
6 tbsps butter .
3 large russet potatoes .
2 c coarse dry breadcrumbs
Directions
Step #1 Place potatoes In a large-ish pot, cover with cold water, & bring to a boil over medium-high heat.
Step #2 Cook potatoes, until tender, partially covered, about 35 mins.
Step #3 Drain & set aside until cool enough to handle (but not too long: The hotter potatoes are when peeled & riced, the lighter gnocchi will be).
Step #4 Peel potatoes, then press through a potato ricer onto a clean surface.
Step #5 Spread in a thin layer to cool completely.
Step #6 Gather potatoes into a mound, salt, form a well, add egg, & nutmeg, & beat together.
Step #7 Knead dough, slowly adding about 1 1/2 c flour, until smooth & slightly sticky.
Step #8 Roll out dough on a floured surface to 1/4'' thick.
Step #9 Using a 4'' round cookie cutter or a glass, cut out 30 circles.
Step #10 Gather scraps together to roll out again, if necessary.
Step #11 To fill gnocchi, cut plums into 30 3/4'' pieces.
Step #12 Place a dough circle in palm of your hand, place a piece of plum in center, then sprinkle with 1/2 tsps sugar.
Step #13 Gather dough up & around plum & press to seal, pinching dough together if it tears.
Step #14 Shape into a smooth, even ball, then place on a lightly floured tray.
Step #15 Repeat with remaining dough & filling.
Step #16 Melt butter In a large-ish skillet over med-heat/flame.
Step #17 Add bread crumbs & toast, until deep golden brown, stirring constantly, about 7 mins.
Step #18 Remove from heat & add cinnamon & remaining sugar.
Step #19 Cook gnocchi in small batches (so that they don't touch) In a large-ish pot of boiling water over high heat.
Step #20 Stir carefully to prevent sticking & cook this until dough is tender & slightly translucent, about 20 mins.
Step #21 Lift gnocchi from boiling water with a slotted spoon, drain well, then roll each in the bread crumbs to coat well.
Step #22 Arrange on a serving platter & sprinkle with any remaining bread crumbs.
Step #23 Serve warm.
