Creole Gumbo Recipe

Ingredients
  • 1/2 c butter
  • 1 lb Creole smoked sausage
  • 1 green bell pepper, sliced
  • 2 1/2 c water
  • 1 lb shrimp
  • 1 white onion, sliced
  • 1/2 c all-purpose flour
  • 2 tbsps Cajun-style seasoning
  • 4 bone-in chicken breast halves, with skin
  • 8 chicken thighs

Directions
  • Step #1 Boil chicken breasts & thighs with onion & bell pepper in a large pot of salted water, for about 40 mins or until cooked through & no longer pink inside.
  • Step #2 Drain, debone chicken & set aside.
  • Step #3 In a large saucepan stir this together flour & butter over low heat/flame to make a roux; add boiled chicken, sausage & water & bring all to a boil.
  • Step #4 Cover saucepan & let simmer over low heat/flame for about 1 1/2 hrs.
  • Step #5 Add shrimp & let simmer for about 1 more hr, then add seasoning to taste & serve.
