Step #1
Boil chicken breasts & thighs with onion & bell pepper in a large pot of salted water, for about 40 mins or until cooked through & no longer pink inside.
Step #2 Drain, debone chicken & set aside.
Step #3 In a large saucepan stir this together flour & butter over low heat/flame to make a roux; add boiled chicken, sausage & water & bring all to a boil.
Step #4 Cover saucepan & let simmer over low heat/flame for about 1 1/2 hrs.
Step #5 Add shrimp & let simmer for about 1 more hr, then add seasoning to taste & serve.
