Artichoke Pasta Casserole Recipe

Ingredients
  • 1 (10 oz) package pasta shells .
  • 2 (7 oz) cans artichoke hearts .
  • 1/2 tsp paprika .
  • 1/8 tsp garlic powder .
  • 1/2 c sour cream .
  • 1 tbsp fresh oregano leaves, minced .
  • 1/2 tsp seasoning salt .
  • 1/2 c mayonnaise .
  • 1/4 c white wine .
  • 1/2 c finely sliced red onions .
  • 1 tomato, sliced .
  • 1/2 lb mushrooms, sliced .
  • 2 tbsps butter or margarine .
  • 1/4 tsp pepper .
  • 1/2 c parmesan cheese, grated

Directions
  • Step #1 1.
  • Step #2 Cook pasta according to package directions.
  • Step #3 Rinse under cold water & drain well.
  • Step #4 2.
  • Step #5 Mix pasta with artichoke hearts.
  • Step #6 3.
  • Step #7 Saute mushrooms & onion in butter until soft.
  • Step #8 4.
  • Step #9 Mix together pasta & artichoke mixture with mushrooms, Parmeasan cheese, sour cream, mayonnaise, white wine & seasonings.
  • Step #10 5.
  • Step #11 Pour mixture into a medium casserole dish.
  • Step #12 Top with tomato slices.
  • Step #13 6.
  • Step #14 Cook casserole at 350 degrees for 25 to 30 mins or until hot.
  • Step #15 7.
  • Step #16 Garnish with fresh oregano if desired.
  • Step #17 *** You can also microwave this dish.
  • Step #18 The only part you would change is Step 3.
  • Step #19 You would place mushrooms & onion with butter in a microwave dish.
  • Step #20 Cover up & Microwave at high for 3 mins Continue to follow directions above & then microwave at High for 8 to 10 mins.
