Nam Prik Panaeng { Panaeng Curry Paste} Recipe

Ingredients
  • 2 tsps minced fresh or frozen galangal .
  • 2 large shallots, thinly sliced .
  • 2 stalks lemongrass, thinly sliced .
  • 1 tsp salt .
  • 12 small dried red chili peppers .
  • 2 tsps coriander seeds .
  • 4 garlic cloves, sliced .
  • 1 tsp shrimp paste .
  • 1-2 tbsp water

Directions
  • Step #1 Soak chilis in warm water to cover about 1 hr or untill just softened.
  • Step #2 Drain & discard water.
  • Step #3 In a food grinder, process chilis, garlic coriander seeds, galangal, lemongrass,shallots, salt, & shrimp paste untill smooth.
  • Step #4 Gradually ad 1 to 2 tbsps water to assist in the mixing.
  • Step #5 The paste should be smooth but not wet.
  • Step #6 Store in a airtight container in teh refrigerator 1 to 2 weeks, or frozen up to 6 months.
