Cheese Souffle With Blueberry Sauce Recipe

Ingredients
  • 1/4 tsp cinnamon .
  • 3/4 c water .
  • 3 tbsps sugar .
  • 1 tsp baking powder .
  • 2 tbsps lemon juice .
  • 1/2 c softened butter .
  • 3/4 c sour cream .
  • blueberry sauce .
  • 1/4 c orange juice .
  • 4 oz softened cream cheese .
  • 1 1/2 c fresh blueberries or frozen blueberries .
  • 3 eggs .
  • 1/2 tsp vanilla .
  • 1/2 c flour .
  • 1/2 c sugar .
  • 1 1/2 tsps sugar .
  • 1/4 tsp nutmeg .
  • 4 tsps cornstarch .
  • 1 c small curd cottage cheese .
  • 1 egg yolk

Directions
  • Step #1 Heat oven to 350 degrees.
  • Step #2 Lightly spray a 8" x 8" x 2" baking dish with Pam & set aside.
  • Step #3 FILLING: In a small bowl, beat cottage cheese, cream cheese, egg yolk, sugar & vanilla with electric mixer till nearly smooth (about 2 mins).
  • Step #4 Set aside.
  • Step #5 BATTER: In a medium bowl, beat sour cream, orange juice, butter, & eggs with electric mixer on lowish speed until smooth.
  • Step #6 Add flour, 3 tbsps of sugar & baking powder.
  • Step #7 Beat for 2 more mins until smooth.
  • Step #8 TO ASSEMBLE: Spread 1/2 the batter in the greased baking dish.
  • Step #9 Spoon cheese filling in small spoonfuls on top.
  • Step #10 Carefully spread remaining batter on top.
  • Step #11 Place in the oven for approximately 40-45 mins until puffy & golden.
  • Step #12 (Watch closely for the last 5 mins so not to overcook).
  • Step #13 Serve as soon as possible with Blueberry sauce or syrup.
  • Step #14 BLUEBERRY SAUCE:.
  • Step #15 In a sauce pan over med-heat/flame, stir this together the sugar, cornstarch, cinnamon & nutmeg.
  • Step #16 Slowly stir in the water.
  • Step #17 Cook & stir frenquently until thickened, then cook 2 more mins.
  • Step #18 Carefully stir in the blueberries & lemon juice.
