Sweet Potato Salad Recipe

Ingredients
  • 2 tbsps sliced fresh parsley or 1 tbsp dried parsley flakes .
  • 3/4 tsp salt, divided .
  • 1/2 c sliced onions .
  • 3 tbsps brown sugar .
  • 1 jalapeno pepper, seeded & finely sliced .
  • 1/3 c sliced green bell peppers .
  • 2 lbs sweet potatoes, peeled & cut into 1-inch cubes .
  • 1 tsp hot sauce .
  • 3 slices pepper bacon (optional) or regular bacon, cooked & crumbled (optional) .
  • fresh flat-leaf parsley sprigs .
  • Garnish .
  • 2 celery ribs, sliced .
  • vegetable oil cooking spray .
  • 1 tbsp vegetable oil .
  • 5 tbsps white vinegar .
  • 1 tsp prepared mustard

Directions
  • Step #1 Arrange potatoes in an even layer in a 15- x 10-inch jelly-roll pan.
  • Step #2 Coat with cooking spray, & sprinkle with 1/2 tsp salt.
  • Step #3 Bake at 400° for 25 mins or just until tender.
  • Step #4 Let cool slightly.
  • Step #5 Stir together remaining 1/4 tsp salt, celery, & next 9 ingredients In a large-ish bowl until mixed.
  • Step #6 Add potatoes, & toss carefully to coat.
  • Step #7 Sprinkle top with crumbled bacon, if desired; garnish, if desired.
  • Step #8 Serve warm or chilled.
