Blueberry French Toast Cobbler Recipe

Ingredients
  • 4 eggs .
  • 1/2 c sugar .
  • 1 tsp cornstarch .
  • 1/2 c milk .
  • 10 slices day-old French bread (3/4-inch thick) .
  • 1/4 tsp baking powder .
  • 1 tbsp butter or margarine, softened .
  • 1 tsp vanilla .
  • 2 tbsps butter or margarine .
  • 1 tsp cinnamon .
  • 4 1/2 c unsweetened frozen blueberries

Directions
  • Step #1 Beat eggs, milk, vanilla & baking powder until smooth.
  • Step #2 Pour into large shallow baking dish.
  • Step #3 Add bread slices, turning once to coat.
  • Step #4 Cover up & chill 8 hrs or overnight.
  • Step #5 Combine blueberries, sugar, melted butter, cornstarch & cinnamon.
  • Step #6 Pour into greased 9x13x2" baking dish.
  • Step #7 Cover up & chill 8 hrs or overnight.
  • Step #8 Remove both pans from refrigerator 30 mins.
  • Step #9 before baking.
  • Step #10 Place prepared bread on top of blueberry mixture.
  • Step #11 Spread softened butter on top.
  • Step #12 Bake, uncovered, at 400F for 30-35 mins, or until toast is golden brown & blueberries bubble.
