Twice Baked Potatoes With Parmesan Recipe

Ingredients
  • paprika .
  • 1 bulb of garlic .
  • 1/4 c grated parmesan cheese .
  • 1/2 c fat free sour cream .
  • 1/2 tsp fresh ground pepper .
  • 1/2 c low sodium chicken broth .
  • 4 large potatoes

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Scrub potatoes, dry them off & pierce several times with a fork; place on a baking sheet.
  • Step #3 Wrap garlic in foil wrap & place alongside the potatoes.
  • Step #4 Bake until potatoes are tender & the garlic is browned & softened, 50-60 mins.
  • Step #5 Let them stand until they are comfortable to handle, about 15 mins.
  • Step #6 Cut potatoes in half, lengthwise, remove cooked potato & put in large bowl.
  • Step #7 Be careful to leave the skin intact.
  • Step #8 Cut the garlic bulb in half; squeeze out the pulp & add to potato.
  • Step #9 Add the broth, sour cream, & pepper; stir & mash with a fork to desired texture.
  • Step #10 Spoon the stuffing back into the skins; sprinkle with paprika & cheese.
  • Step #11 Return potatoes to the baking sheet & bake this until heated through & lightly browned, about 15 mins.
