Chicken Breasts With Lime Sauce Recipe

Ingredients
  • 1 lime, juiced
  • 4 skinless, boneless chicken breast halves - lbed to 1/4 inch thickness
  • 2 tbsps olive oil
  • 1 egg, beaten
  • 6 tbsps butter
  • 2/3 c dry bread crumbs
  • 1 tsp minced fresh chives
  • 1/2 tsp dried dill weed

Directions
  • Step #1 Coat chicken breasts with egg, & dip in bread crumbs.
  • Step #2 Place on a wire rack, & allow to dry for about 10 mins.
  • Step #3 Heat olive oil in a large skillet over med-heat/flame.
  • Step #4 Place chicken into the skillet, & fry for 3 to 5 mins on each side.
  • Step #5 Remove to a platter, & keep warm.
  • Step #6 Drain grease from the skillet, & squeeze in lime juice.
  • Step #7 Cook over low heat/flame until it boils.
  • Step #8 Add butter, & stir until melted.
  • Step #9 Spice up with chives & dill.
  • Step #10 Spoon sauce over chicken, & serve as soon as possible.
