Ingredients
  • 1/4 tsp pepper .
  • 1 1/2 tsps salt .
  • 2 tbsps butter or margarine .
  • 3/4 c dry white wine .
  • 1/2 c whipping cream .
  • 2 tbsps butter or margarine .
  • 1 c water .
  • 2 tbsps shallots, finely sliced .
  • 8 oz green seedless grapes .
  • 2 tbsps flour .
  • 2 lbs fish fillets .
  • 1 tbsp lemon juice

Directions
  • Step #1 Sprinkle top fish with salt & pepper; fold in half.
  • Step #2 Place fish in 10-ince skillet; add wine, water, shallots & lemon juice.
  • Step #3 Heat to boiling; reduce heat.
  • Step #4 Cover up & let simmer until fish flakes easily with fork, 4 - 5 mins.
  • Step #5 Remove with slotted spatula to heatproof platter, keep warm.
  • Step #6 Add grapes to liquid in skillet.
  • Step #7 Heat to boiling; reduce heat.
  • Step #8 Simmer uncovered 3 mins.
  • Step #9 Remove grapes with slotted spoon.
  • Step #10 Heat liquid in skillet to boiling; boil until reduced to 1 c.
  • Step #11 Pour liquid into measuring c; reserve.
  • Step #12 Heat 2 Tbl butter in skillet until melted; stir in the flour.
  • Step #13 Cook & stir 1 min; remove this from heat.
  • Step #14 Stir in reserved liquid & the whipping cream.
  • Step #15 Heat to boiling, stirring constantly.
  • Step #16 Boil & stir 1 min.
  • Step #17 Add 2 Tbl butter, stir until melted.
  • Step #18 Drain excess liquid from fish; spoon sauce over fish.
  • Step #19 Set oven to broil.
  • Step #20 Broil fish 4 inches from heat just until sauce is glazed, about 3 mins.
  • Step #21 Garnish with grapes.
