Gourmet Mag Short Order Chicken And Gravy Recipe

Ingredients
  • 3/4 c low sodium chicken broth .
  • 1/2 tsp dried thyme, crumbled .
  • 1 whole chicken breast, halved .
  • 1 garlic clove, minced .
  • 1 1/2 tbsps all-purpose flour .
  • 1/2 tbsp vegetable oil .
  • 1 tsp fresh parsley, minced .
  • 1/2 tbsp unsalted butter .
  • 4 tsps fresh lemon juice

Directions
  • Step #1 Mash garlic with 1/2 tsp salt.
  • Step #2 Stir together garlic paste, thyme, & 3 tsps lemon juice.
  • Step #3 Add chicken & marinate covered 15 mins.
  • Step #4 Pat chicken dry.
  • Step #5 Heat oil & butter in heavy skillet & saute chicken, skin side down, until golden, about 2 mins on each side.
  • Step #6 Transfer chicken with tongs to a plate.
  • Step #7 Add flour to skillet & cook roux over moderately low heat, whisking, 3 mins.
  • Step #8 Whisk in broth & remaining lemon juice in a stream.
  • Step #9 Whisk til smooth.
  • Step #10 Return chicken to skillet with any juices & let simmer, covered, 15 mins, or until springy to the touch & just cooked through.
  • Step #11 Stir in parsley & serve over rice.
