Paul Prudhomme's Chicken Diane Recipe

Ingredients
  • 2 tsps cajun magic poultry seasoning .
  • 12 oz boneless skinless chicken breasts, cut into strips (*) .
  • 1 tsp fresh garlic, minced .
  • 1 tbsp cajun magic poultry seasoning .
  • 3 tbsps fresh parsley, minced .
  • 1 c chicken stock .
  • 6 oz unsalted butter or margarine .
  • 6 oz pasta, dry (We like Fettuccine) .
  • 1/2 lb fresh mushrooms, sliced .
  • 1/4 c green onion tops, minced .
  • shrimp, may be substituted

Directions
  • Step #1 Cook pasta & set aside.
  • Step #2 Mash 1/3 of the butter or margarine & mix with seasoning & chicken.
  • Step #3 Heat a skillet over a high fire until it's hot (about 4 mins).
  • Step #4 Add chicken pieces & brown them about 2 mins on the first side & about 1 min on the other.
  • Step #5 Add mushrooms & cook 2 mins.
  • Step #6 Add green onions, parsley, garlic & stock.
  • Step #7 Cook 2 more mins or until the sauce is at a rolling boil.
  • Step #8 Add remaining butter or margarine (cut into pats), stirring & shaking the pan to incorporate.
  • Step #9 Cook for 3 mins & add the cooked pasta.
  • Step #10 Stir & shake the pan to mix well.
  • Step #11 Serve as soon as possible.
