Cioppino Recipe

Ingredients
  • 1 lb shelled & deveined shrimp (fresh or frozen) .
  • 1/2 c white wine .
  • 2 tbsps oil .
  • 1/4 c sliced parsley .
  • 1 (28 oz) can tomatoes, cut up .
  • 1 medium green pepper, sliced .
  • 1 1/2 lbs crab, cut into chunks or 2 (12 oz) packages frozen crab, cut into chunks .
  • 1 large onion, sliced .
  • 1 garlic clove, minced .
  • salt & pepper .
  • 1 1/2 lbs striped bass fillets or skinless cod, cut into serving pieces

Directions
  • Step #1 Thaw crab & shrimp.
  • Step #2 Cover up & put in the fridge shellfish & fish till needed, about 45 mins before serving.
  • Step #3 In Dutch oven over med-heat/flame in hot oil, cook onion, green pepper & garlic until tender, about 5 mins.
  • Step #4 Add tomatoes & their liquid, wine, parsley & seasoning; reduce heat to low, cover & let simmer 15 mins.
  • Step #5 Increase heat to medium high; add fresh crab; cook 10 mins, stirring every once in awhile.
  • Step #6 If using frozen crab, add during last 2 mins of cooking.
  • Step #7 Carefully add fillet pieces & shrimp.
  • Step #8 Return to boiling, then reduce heat.
  • Step #9 Cover up & let simmer for 5 more mins or until fish flakes easily when tested with a fork & shrimp are tender.
  • Step #10 Serve as soon as possible in soup bowls.
