2 bunches green leaf lettuce (or an equal amount of garden lettuce if you should be so lucky!) .
1 bunch green onions, tops only, sliced small .
1 tsp sugar .
1 c cream or evaporated milk
Directions
Step #1 Cut up lettuce & onion tops, place this In a large-ish bowl.
Step #2 Place bacon on top of lettuce.
Step #3 Have all the rest of the ingredients ready, because this goes quickly!
Pour out all but 3T.
Step #4 of the bacon grease.
Step #5 Set the skillet on medium heat & add the cream, salt & sugar.
Step #6 From this point you will be whisking constantly.
Step #7 Heat the cream until it begins to steam - don't let it bubble.
Step #8 Add the vinegar slowly, whisking constantly until the mixture begins to steam.
Step #9 Pour the mixture over the lettuce, toss & serve immediatly.
Step #10 Make sure you have some good bread to soak up the leftover juices - trust me, folks will fight for the last drops!
Note: All the whisking is to keep the dressing from "breaking", or separating.
Step #11 If it does, no problem.
Step #12 It's not as pretty, but it still tastes fabulous.
