Down On The Farm Breakfast Recipe

Ingredients
  • 1/2 c shredded Cheddar cheese
  • 2 tbsps sliced onion
  • 2 1/4 c boiling water
  • 1 (5.5 oz) package au gratin potato mix
  • 8 slices bacon, cut into 1/4 inch pieces
  • 6 eggs
  • 1/4 tsp dried thyme
  • 2/3 c milk
  • 1/4 c sliced green pepper
  • Dash pepper

Directions
  • Step #1 Cook bacon in a large skillet until crisp.
  • Step #2 Drain, reserving 2 c drippings in the skillet with the bacon.
  • Step #3 Stir in contents of au gratin potato mix, water, milk green pepper, onion & thyme.
  • Step #4 Bring to a boil, stirring frequently.
  • Step #5 Reduce heat; cover & let simmer, stirring every once in awhile, for 20 mins.
  • Step #6 Transfer to an ungreased 2-qt.
  • Step #7 baking dish.
  • Step #8 Make six indentations.
  • Step #9 Sprinkle top with pepper.
  • Step #10 Cover & bake this at 350 degrees F for 20 mins or until eggs reach desired doneness.
  • Step #11 Sprinkle top with cheese.
