Zucchini Fruit Cocktail Loaf Recipe

Ingredients
  • 2 tsps baking soda .
  • 3 large eggs .
  • 17 oz fruit cocktail, drained .
  • 1 tsp salt .
  • 1 c vegetable oil .
  • 2 c shredded zucchini .
  • 2 c sugar .
  • 2 tsps vanilla extract .
  • 3/4 tsp ground nutmeg .
  • 3 c all-purpose flour .
  • 1 c sliced walnuts .
  • 1 1/2 tsps ground cinnamon

Directions
  • Step #1 In a large-ish mixing bowl, beat eggs.
  • Step #2 add sugar, oil & vanilla.
  • Step #3 beat well.
  • Step #4 stir in the zucchini & fruit coctail.
  • Step #5 mix dry ingredients, stir in theto zucchini mixture.
  • Step #6 stir in the nuts.
  • Step #7 pour this into two greased & floured 8x4" loaf pans.
  • Step #8 bake this at 325* for 60-70 mins or until bread tests done.
  • Step #9 cool 10 mins before removing from pans to wire rack.
