Frosted Cranberry Squares Recipe

Ingredients
  • 1 tbsp butter or margarine .
  • 7 oz ginger ale .
  • 1 (13 1/2 oz) can crushed pineapple .
  • 1 (8 oz) package cream cheese, softened .
  • 1 (8 oz) container whipped topping .
  • 1/2 c sliced pecans .
  • 1 lb jellied cranberry sauce .
  • 2 (3 oz) packages lemon Jell-O gelatin

Directions
  • Step #1 Drain pineapple, reserving syrup.
  • Step #2 Add water to syrup to make 1 c.
  • Step #3 Heat liquid in a small saucepan until mixture is boiling.
  • Step #4 Dissolve gelatin in liquid & cool.
  • Step #5 Pour liquid into a mixing bowl & carefully stir in the Ginger Ale; chill til partially set.
  • Step #6 Meanwhile, mix pineapple & cranberry sauce.
  • Step #7 Fold into gelatin mixture.
  • Step #8 Turn mixture into 9x9x2 dish.
  • Step #9 Chill until firm.
  • Step #10 Fold cream cheese & whipping topping together until mixed.
  • Step #11 Spread over firm gelatin.
  • Step #12 Toast pecans in butter in a 350 oven for about 10 mins.
  • Step #13 Cool & sprinkle it over top of salad.
  • Step #14 Chill.
  • Step #15 Cut into 9 squares to serve.
