Mediterranean Stuffed Peppers Recipe

Ingredients
  • 3/4 c fresh tomatoes, sliced .
  • 2 garlic cloves, finely sliced .
  • 2 large bell peppers, your choice of color, cut in half lengthwise, seeds & membrane removed .
  • 1/2 c onions, sliced .
  • salt & pepper .
  • 1/3 c feta cheese, crumbled .
  • 12 kalamata olives, pits removed, sliced .
  • 2/3 c water .
  • 2 tbsps parmesan cheese, grated .
  • 1 tsp hot pepper flakes (optional) .
  • 1 1/2 tbsps fresh mint, sliced .
  • 1/2 c couscous .
  • 1 tbsp butter or margarine

Directions
  • Step #1 Pre heat oven to 375°F.
  • Step #2 Bring the water to a boil, add the butter/margerine, stir this to melt, mix, stir in the couscous, cover & set aside for 5 mins.
  • Step #3 After 5 mins remove lid, stir this to loosen the granuals & allow it to cool before mixing it with the other ingredients.
  • Step #4 In a bowl mix all the ingredients except peppers & Parmesan cheese.
  • Step #5 Place the cut, cleaned peppers in a baking dish & fill the cavities with the stuffing.
  • Step #6 Cover up with foil wrap or a lid & place this in preheated oven for 30 mins, remove foil wrap/lid, sprinkle with parmesan cheese.
  • Step #7 Return to oven for an extra 15 mins.
  • Step #8 If not golden on top place under broiler for a min or two but be careful that they don't burn.
