Step #4 If kneading by hand, stir vigorously until dough is stretchy, about 5 mins.
Step #5 Stir in 1 1/4 c flour.
Step #6 Scrape dough onto a lightly floured board & knead until smooth, 10 to 12 mins, & no longer sticky, elastic, adding flour as required to prevent sticking.
Step #7 If kneading with a dough hook, beat on lowish speed until flour is incorporated.
Step #8 Add 1 1/4 c flour.
Step #9 Beat on lowish speed to mix, then on high speed until dough no longer feels sticky, & pulls cleanly from bowl, 10 to 12 mins.
Step #10 If dough is still sticky, beat in flour, 1 tbsp at a time.
Step #11 Place dough in an oiled bowl, turn over, & let rise in a warm place until doubled, cover airtight, about 1 hr.

Step #13 On a lightly floured board or with a dough hook, briefly knead dough to expel air.
Step #14 Cut into 6 equal pieces & shape each into a smooth ball.
Step #15 Flatten 1 ball by hand, then roll this into an 8-inch round (or into a 7-in.
Step #16 round if using frozen bread dough), reflouring board & rolling pin as needed to prevent sticking.
Step #17 Brush round with about 3/4 tsp olive oil & sprinkle with about 1 tsp rosemary, a scant 2 tbsps parmesan, & pepper.
Step #18 Lightly press in seasonings.
Step #19 Cover up a plate with plastic wrap.
Step #20 Place seasoned round on wrap, cover with plastic wrap, & chill in the fridge.
Step #21 Repeat to shape remaining balls.
Step #22 As each round is finished, add to stack, cover with plastic wrap, & chill in the fridge.
Step #23 (If making dough ahead, wrap stack airtight & chill up to 6 hrs.
Step #24 ).
Step #25 Place a few dough rounds at a time, seasoned side up, on an oiled grill over a solid bed of medium-hot coals, or over medium-high heat on a gas grill (you can hold your hand at grill level only 3 to 4 seconds).
Step #26 Cover up gas grill.
Step #27 With a wide spatula, every once in awhile lift & rotate breads for even browning.
Step #28 When bottoms are well browned, 2 to 3 mins, turn breads over.
Step #29 Cook until seasoned sides are light brown, 1 to 2 more mins.
