Step #1 Bring water to a boil in a covered 5- to 6-quart pan over high heat.
Step #2 Rinse chicken breasts.
Step #3 Add chicken to boiling water, cover, & return to a boil.
Step #4 As soon as water returns to boil, covered, remove this from heat & let this stand, until chicken is no longer pink in center of thickest part (cut to test), 12 to 18 mins.
Step #5 If chicken is still pink, return it to the hot water, cover pan, & let steep a few mins longer.
Step #6 Remove chicken from water & let cool, about 20 mins.
Step #7 With your hands, tear chicken along the grain into shreds about 1/2 inch thick.
