Spicy Cream Spinach With Cheddar Cheese Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 1 c whipping cream .
  • 2 garlic cloves, sliced .
  • 20 oz fresh spinach leaves .
  • 2 jalapenos, stemmed & sliced (remove seeds if milder flavor is desired) .
  • 8 oz sharp cheddar cheese, grated .
  • 1 white onion, peeled & finely sliced .
  • 2 1/2 tbsps flour .
  • 1 tsp salt .
  • 1 tbsp butter .
  • 1 c chicken broth or turkey broth

Directions
  • Step #1 Wash spinach & remove any large stems.
  • Step #2 Cut or tear large leaves into small pieces.
  • Step #3 (Thaw & drain frozen spinach.
  • Step #4 ).
  • Step #5 In saute pan over medium-high heat, melt butter.
  • Step #6 Add onion, garlic, & jalapeños & saute until onions are translucent (do not brown).
  • Step #7 Stir in flour & mix well.
  • Step #8 Add stock & bring to boil.
  • Step #9 In small batches, wilt spinach in pan (if frozen spinach is used, add all at once).
  • Step #10 When all spinach is in pan, add cream & bring to boil.
  • Step #11 Lower heat to simmer.
  • Step #12 Add cheddar cheese & mix well.
  • Step #13 Spice up with salt & pepper.
  • Step #14 May be made & reheated later.
